Lately, I’ve been waking up at 5:30 and heading to the gym and working on cardio/strength training. I can’t believe the progress I’ve been seeing lately. You know the saying “it takes 21 days to form a habit”? Well they are entirely correct! After Getting my lazy butt up every morning for the gym, it’s become so habitual that it’s not even a task for me anymore, more so a part of my day.

Today after my workout I made a 3 egg white omelet with corn beans peppers and onions alongside a bowl of cottage cheese, cinnamon, blueberries, 1/3 a banana, a splash of almond milk to make the portion size look a bit bigger heheh. By adding some almond milk (40 calories per cup!) and then letting it freeze for about 3 minutes, it really adds a lot more servings with very little extra calories. Also a nectarine on the side never hurt anyone! It’s crazy thinking that I managed to pack in about 30 grams of protein in this meal! As a vegetarian it can be so hard for me to get protein, and not all protein shakes taste great, so this was incredibly filling and delicious.

I’ve been doing my best to cut back on processed carbs and aim for more protein, as you can see since my breakfast did not include toast today!! ๐Ÿ™‚

20140628_141523128_iOSI’ve also tried to cut back on coffee and replace it with tea. I found this delicious ‘slimming tea’ which, when squeezed with a lemon, actually taste delicious! I’m someone who needs sugar and creamer in coffee, so I expected this tea to taste bland, but the lemon really adds a kick to it.

20140628_123305000_iOSAnother thing I’ve been realizing lately, and it took me 20 years to realize, is that its about how you feel and how healthy you are that matters, NOT the scale. So smile, be proud of yourself, and if you aren’t proud DO something about it! Eat healthier, workout harder, but aim to be the best you can be!
