Cheers to the ending of June and bring on July! Although I’ve had this juicer since Christmas time, I’ve decided to buy a few books on how to juice, why to juice, the benefits, and yada yada you know all that technical stuff. I purchased “The Everything Guide to Juicing” which I highly recommend. This specific edition has 150 recipes AND includes nutrition information and the healing powers of all the juices. I decided to give it a whack and try celery, carrots, an apple, some kale, and a few strawberries. I recommend putting the kale in first, and then the rest of the vegetables and fruit, the kale didn’t juice right away so I needed some of the vegetables and fruit to push it through. Some people think it’s gross, other people claim it’s amazing only because it’s the new “trend” and they want to seem “healthy” but honestly, if it doesn’t taste good then i WILL NOT touch it. To my surprise, it actually came out great! The celery wasn’t too overpowering and the strawberries really sweetened it up. I added some frozen blueberries to be used as “ice cubes” so the juice wouldn’t be watered down. I’ll have to experience with more recipes and get back to you all!
Lately, I’ve been waking up at 5:30 and heading to the gym and working on cardio/strength training. I can’t believe the progress I’ve been seeing lately. You know the saying “it takes 21 days to form a habit”? Well they are entirely correct! After Getting my lazy butt up every morning for the gym, it’s become so habitual that it’s not even a task for me anymore, more so a part of my day.
Today after my workout I made a 3 egg white omelet with corn beans peppers and onions alongside a bowl of cottage cheese, cinnamon, blueberries, 1/3 a banana, a splash of almond milk to make the portion size look a bit bigger heheh. By adding some almond milk (40 calories per cup!) and then letting it freeze for about 3 minutes, it really adds a lot more servings with very little extra calories. Also a nectarine on the side never hurt anyone! It’s crazy thinking that I managed to pack in about 30 grams of protein in this meal! As a vegetarian it can be so hard for me to get protein, and not all protein shakes taste great, so this was incredibly filling and delicious.
I’ve been doing my best to cut back on processed carbs and aim for more protein, as you can see since my breakfast did not include toast today!! 🙂
I’ve also tried to cut back on coffee and replace it with tea. I found this delicious ‘slimming tea’ which, when squeezed with a lemon, actually taste delicious! I’m someone who needs sugar and creamer in coffee, so I expected this tea to taste bland, but the lemon really adds a kick to it.
Another thing I’ve been realizing lately, and it took me 20 years to realize, is that its about how you feel and how healthy you are that matters, NOT the scale. So smile, be proud of yourself, and if you aren’t proud DO something about it! Eat healthier, workout harder, but aim to be the best you can be!

What do I honestly miss about summertime and being home? The fact that I can just wake up and go for a run without having to deal with morning classes or such. I woke up this morning, pretty late actually (10:30am) and made myself another egg sammie, but this time i added peppers and onions…and toasted the bread ha! genius! After I digested and got the energy, I did my usual 1 mile run. It was extremely humid and I honestly felt like i wouldn’t be able to complete the full mile, but I stuck it out and managed to do so 🙂 I tried hula hooping this morning and it was the worst sensation ever! Just from the ten minutes from yesterday I have such pains in my hips and a nice bruise or two developing on my sides. I think maybe every other day is a good idea haha.
I’m so excited to get back to my job at Rita’s today. The atmosphere, the people, and my co-workers literally make the nights probably the best nights I have all summer. Getting called off because of the weather conditions or because it’s just extremely slow is the worst thing though (along with having such a big sweet tooth and wanted to eat all the ice cream!) let’s hope the weather stays put for tonight!
Glad to say we successfully (but not easily) made it home to New Jersey. After my sad goodbye to Bryan this morning, My parents and Erica picked me up around 9am and we set off for the 5 hour drive. The first obstacle: Fog. After my trip last month in April back home to visit our families with Bryan, I feel as though I’ve developed such a strong anxiety when it comes to long carrides, or at least carrides that consist of a lot of mileage on highways. That trip in April was during one of the heaviest storms I’ve ever been in, the kind where the windshield wipers don’t wipe fast enough, where everyone has their hazards blinking and the car infront of you is nearly invisible. It was the kind of rain in which you hydroplane nearly three times in an hour and the car beside you splashes you with water that makes you nearly drive off the road. God, I’m shivering just reminiscing on that scary night. I made Bryan pull over just to get my mind straight.
Anyways as I was saying…the fog. It was about 9am when we started, and the fog was just beginning. It was only about 20 minutes of the trip and luckily there were very few cars on the road, but looking out the front windshield and not being able to see a single thing, barely two feet infront of you really irks me and made my anxiety quite high. It didn’t really help when rain starting spitting from the sky, because that’s what sent me back to the memories of April’s trip. And of course, to top of the beautiful sundae of a trip, those big 18 wheelers decide to forget how to drive and nearly drive us off the road four times. I’ll be honest and say I’m not the best driver, but if you are going to drive for a living in an 18 wheeler….please be a good driver.
After all the anxiety building obstacles, we made it back to my sweet little home in New Jersey. I was starving when I got home, and I didn’t realize how hungry I was until I walked in the door. I grabbed a dannon light and fit yogurt and paired it with a cup of blueberries. I also snacked on a few Wheat Thins Vegetable Selects (unpictured…sorry!) Now I have the rest of the day to relax and pet my beautiful cats whom I’ve missed so much 🙂
snack time! chowing down on some strawberries and trail mix after a nice little tan/hockey toss arounds session with Bryan and his cousin. It’s been way too hot to actually go out and do something, even Bryan could barely stay outside for more than an hour, and he’s always wanting to go out and play hockey. Today should be really great, everyone’s celebrating the end of the semester so this apartment should be a full house tonight 🙂
Welp, it was nice to wake up on a friday and have absolutely nothing to do! No classes, no exams, no nothing. Bryan and I woke up around 9:45 and he left to pick up his cousin from the dorms and bring him over here until his dad picks him up tomorrow morning. All three of us went to Fosters dining hall for brunch. Bryan got a delicious looking waffle while I grabbed some vegetable soup and breakfast potatoes, which I have been inlove with this past week! Weird combination, I know, but I couldn’t pass it up. It’s another beautiful day out so hopefully I can get some color on my skin today. I entered my username and password to activate my summer classes and I already have assignments due on the first day of class! Good thing I looked ahead of time or I would have been in deep trouble. My parents and sister have left NJ and made it to PA to pick me up this weekend! I cannot wait to see them tomorrow at our family BBQ. As much as I really wanted to go away to college, it’s nice every once in a while to come back and see them Luckily I have all summer until my apartment lease starts and I’ll rarely see them after that 😦 I guess that’s the whole part of growing up right?
Well thankfully, today is coming to an end. I apolgozie for the lack of posts but this one should fill in my entire day. Waking up at 9am, i grabbed a shower and Bryan and I headed to my dorm to clean out, vaccuum, and get my room checked out by the CA to make sure everything was clean and nothing was broken. I said goodbye to my roommate ashley, wished her luck on her study abroad trip to turkey, and we parted ways. Bryan and I got some lunch at fosters, my lunch included minestrone soup, corn, and a slice of banana bread on the side. We took a trip down to Yellowcreek Park and decided to hike some of the trails on this beautiful, 75 degree weather day. We came upon some interesting findings, such as a treehouse and random stopping points that informed us about different types of birds. We learned that bald eagles make tests that can weigh up to 1 ton! That’s insane! We took a stop at the lake where many people were boat riding and fishing and laid down and relaxed. Too bad we didn’t bring a blankey, or we would have stayed much longer.
When we headed back to his house, his roommate Phil and his girlfriend Emily were unpacking all of Emily’s belongings, so we decided to help and clean up the rest of the apartment. I spent most of the afternoon vaccuuming and washing dishes and space bagging tons of clothes! I did manage to grape a snack of grapes and pineapple, trying to eat them all before my parents pick me up sunday and I can’t just put them to waste! I’ve accumlated so much strawberries and fruit I have no idea what to do with them, way too many for me to consume within the next three days. As of now I’m listening to bryan play guitar while eating a nice vegetable wrap, filled with onions tomatoes, carrots, peppers, spinach, and sadly iceberg lettuce (they did not have romaine to choose from, so I was a tad disappointed). The weather tomorrow seems nice, so hopefully I’ll head for a nice run at some point. We’re picking up Bryan’s cousin Anthony from college tomorrow and he’ll be staying with us for the night, and Saturday my family is having a picnic and I can’t wait to reunite with all of them and see them. It’s been a rough day today, and after going from place to place and final to final and helping my room mate ashley pack her belongings we both were starving! We grabbed a personal pan pizza (about equal to 2 slices of a regular 14 inch pizza) and chowed down. I don’t feel entirely too bad because I didn’t ruin my calorie intake in the morning thank god, and I still have time today to do a nice run….just maybe i should pass on that ice cream with bryan and and settle for a nice fruit parfait 🙂
I got my work schedule for next week and became extremely disappointed to see that I was only selected for two of the seven days of the week 😦 hmmph, there goes my money making summer!
My last final ended real early today, so I was able to grab lunch at 11am today. Hopefully just like yesterday this meal can keep me full for hours! I grabbed a big bowl of minestrone soup with some broccoli on the side and some grapes as well! It’s getting a little humid out so I can feel the rain coming sadly.I can’t believe how fast this year flwe by. In a sense, I feel as though I wasted my freshman year not doing the things I thought I would do. I’m really hoping I can change my sophomore year around. Change is never too late.
